Zucchini and yellow squash au gratin

 

Ingredients:

  • 2 medium zucchini
  • 2 medium yellow squash
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (whole milk or half-and-half)
  • 1 cup shredded Gruyere cheese (or your favorite cheese)
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
  2. Wash the zucchini and yellow squash, then trim off the ends. Use a mandoline slicer or a sharp knife to thinly slice the squash into rounds.
  3. In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux. Cook, whisking constantly, for 1-2 minutes to cook out the raw flour taste.
  4. Slowly pour in the milk while whisking continuously to prevent lumps from forming. Cook the mixture, stirring constantly, until it thickens and comes to a simmer, about 3-5 minutes.
  5. Reduce the heat to low and stir in the shredded Gruyere cheese until melted and smooth. Remove the saucepan from the heat.
  6. Stir in the grated Parmesan cheese, garlic powder, onion powder, salt, and pepper until well combined and the cheese sauce is smooth.
  7. Arrange half of the sliced zucchini and yellow squash in the prepared baking dish in an even layer. Pour half of the cheese sauce over the squash.
  8. Layer the remaining sliced zucchini and yellow squash on top, then pour the remaining cheese sauce evenly over the top.
  9. Sprinkle additional grated Parmesan cheese over the top, if desired.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes, or until the squash is tender and the top is golden brown and bubbly.
  12. Remove from the oven and let the zucchini and yellow squash au gratin cool slightly before serving.
  13. Garnish with fresh chopped parsley, if desired, before serving.
