Ingredients:
- 2 medium zucchini
- 2 medium yellow squash
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk (whole milk or half-and-half)
- 1 cup shredded Gruyere cheese (or your favorite cheese)
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh chopped parsley for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
- Wash the zucchini and yellow squash, then trim off the ends. Use a mandoline slicer or a sharp knife to thinly slice the squash into rounds.
- In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux. Cook, whisking constantly, for 1-2 minutes to cook out the raw flour taste.
- Slowly pour in the milk while whisking continuously to prevent lumps from forming. Cook the mixture, stirring constantly, until it thickens and comes to a simmer, about 3-5 minutes.
- Reduce the heat to low and stir in the shredded Gruyere cheese until melted and smooth. Remove the saucepan from the heat.
- Stir in the grated Parmesan cheese, garlic powder, onion powder, salt, and pepper until well combined and the cheese sauce is smooth.
- Arrange half of the sliced zucchini and yellow squash in the prepared baking dish in an even layer. Pour half of the cheese sauce over the squash.
- Layer the remaining sliced zucchini and yellow squash on top, then pour the remaining cheese sauce evenly over the top.
- Sprinkle additional grated Parmesan cheese over the top, if desired.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the squash is tender and the top is golden brown and bubbly.
- Remove from the oven and let the zucchini and yellow squash au gratin cool slightly before serving.
- Garnish with fresh chopped parsley, if desired, before serving.
- Serve the zucchini and yellow squash au gratin as a delicious and comforting side dish alongside your favorite main course.
- This zucchini and yellow squash au gratin is creamy, cheesy, and packed with flavor, making it a perfect side dish for any occasion. Enjoy!
