Ingredients:
– 8 slices whole wheat bread
– 1/2 cup cranberry sauce
– 1/2 cup mayonnaise
– 1/2 teaspoon dried thyme
– 1/4 teaspoon garlic powder
– 1/4 teaspoon onion powder
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 1 pound cooked turkey breast, sliced
– 4 slices Swiss cheese
– 1 cup baby spinach leaves
– 1/2 cup sliced red onion (optional)
– Butter, for grilling (optional)
Directions:
- In a small bowl, mix together the cranberry sauce, mayonnaise, dried thyme, garlic powder, onion powder, salt, and black pepper until well combined.
- Lay out 4 slices of whole wheat bread on a clean surface.
- Spread a generous amount of the cranberry mayonnaise mixture onto each slice of bread.
- Top each slice with slices of cooked turkey breast, Swiss cheese, baby spinach leaves, and sliced red onion (if using).
- Place the remaining 4 slices of bread on top to form sandwiches.
- If desired, spread butter on the outer side of each sandwich.
- Heat a skillet or grill pan over medium heat.
- Place the sandwiches in the skillet or grill pan and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from the skillet and let the sandwiches cool for a few minutes before slicing and serving.
