Thai Chicken Lettuce Wraps 

Ingredients:

For the chicken filling:

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1/2 cup onion, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sriracha (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped

For the wraps:

  • 1 head of lettuce, separated into leaves

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the finely chopped onion and red bell pepper to the skillet. Cook until they begin to soften, about 3-4 minutes.
  3. Add the minced garlic and grated ginger to the skillet. Cook for another minute until fragrant.
  4. Add the ground chicken to the skillet. Cook until the chicken is browned and cooked through, breaking it up with a spoon as it cooks.
  5. Stir in the soy sauce, fish sauce, lime juice, honey, and sriracha (if using). Cook for another 2-3 minutes, allowing the flavors to meld together.
  6. Remove the skillet from heat and stir in the chopped cilantro and green onions.
  7. To serve, spoon the chicken mixture into the lettuce leaves.
