Ingredients:
For the chicken filling:
- 1 pound ground chicken
- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 1/2 cup red bell pepper, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon sriracha (optional)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, chopped
For the wraps:
- 1 head of lettuce, separated into leaves
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the finely chopped onion and red bell pepper to the skillet. Cook until they begin to soften, about 3-4 minutes.
- Add the minced garlic and grated ginger to the skillet. Cook for another minute until fragrant.
- Add the ground chicken to the skillet. Cook until the chicken is browned and cooked through, breaking it up with a spoon as it cooks.
- Stir in the soy sauce, fish sauce, lime juice, honey, and sriracha (if using). Cook for another 2-3 minutes, allowing the flavors to meld together.
- Remove the skillet from heat and stir in the chopped cilantro and green onions.
- To serve, spoon the chicken mixture into the lettuce leaves.
