Directions:
Prepare the Steaks:
- Season the tenderloin steaks generously with salt and pepper on both sides. Let them sit at room temperature for about 20-30 minutes before cooking.
Heat the Pan:
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat until the butter is melted and begins to sizzle.
Cook the Steaks:
- Carefully add the seasoned steaks to the hot skillet. Cook for about 3-4 minutes on each side for medium-rare, or adjust the cooking time according to your desired level of doneness. Once cooked, transfer the steaks to a plate and cover loosely with foil to keep warm.
Make the Sauce:
- In the same skillet, reduce the heat to medium. Add the remaining tablespoon of butter and allow it to melt.

Deglaze the Pan:
- Pour in the brandy or cognac to deglaze the pan, scraping up any browned bits from the bottom with a wooden spoon. Allow the alcohol to cook off for about 1 minute.
Add the Flavor:
- Stir in the Worcestershire sauce and Dijon mustard, mixing well to combine with the shallots and garlic.
