Ingredients:

  • 1 (3-4 pound) chuck roast
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 3-4 cloves garlic, minced
  • 2 large carrots, peeled and cut into chunks
  • 2 large potatoes, peeled and cut into chunks
  • 2 stalks celery, chopped
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions:

  1. Season the chuck roast generously with salt and pepper on all sides.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, sear the roast on all sides until browned, about 3-4 minutes per side. Transfer the roast to the slow cooker.
  3. In the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant. Add the sautéed onions and garlic to the slow cooker.
  4. Arrange the carrots, potatoes, and celery around the roast in the slow cooker.
  5. In a small bowl, mix together the beef broth, red wine (if using), Worcestershire sauce, bay leaves, dried thyme, dried rosemary, dried oregano, and paprika. Pour this mixture over the roast and vegetables in the slow cooker.
  6. Cover and cook on low heat for 8-10 hours, or on high heat for 4-6 hours, or until the meat is tender and falling apart.
  7. Once the pot roast is cooked, you can optionally thicken the gravy. In a small bowl, mix together 2 tablespoons of cornstarch with 2 tablespoons of cold water until smooth. Stir the cornstarch mixture into the slow cooker. Cover and cook on high for an additional 15-20 minutes, or until the gravy has thickened.
  8. Discard the bay leaves. Taste and adjust seasoning with salt and pepper if needed.
  9. Serve the pot roast and vegetables hot, ladled with plenty of gravy.
