Slow Cooker Beef Stew recipe 

 

Ingredients:

  • 2 lbs beef stew meat, cut into bite-sized pieces
  • 1/4 cup all-purpose flour
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 2 celery ribs, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas (optional)
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Coat beef: In a large bowl, toss the beef stew meat with the flour until evenly coated. Season with salt and black pepper to taste.
  2. Brown beef: Heat the vegetable oil in a large skillet over medium-high heat. Add the coated beef pieces in batches and cook until browned on all sides. Transfer the browned beef to the slow cooker.
  3. Add ingredients to slow cooker: To the slow cooker, add the beef broth, chopped onion, minced garlic, sliced carrots, diced potatoes, sliced celery, dried thyme, dried rosemary, and bay leaf. Stir to combine.

  5. Add peas (optional): If using frozen peas, stir them into the stew during the last 30 minutes of cooking.
