Ingredients:
For the crust:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1/2 cup cold water
For the filling:
- 4 large eggs, scrambled
- 1/2 cup cooked ground beef
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
For the egg wash:
- 1 large egg, beaten
- 1 tablespoon water
Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the flour and salt. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut into rectangles, approximately 3×4 inches.
- In a medium bowl, combine the scrambled eggs, cooked ground beef, shredded cheddar cheese, salt, and pepper.
- Place a tablespoon of the filling onto half of the dough rectangles, leaving a small border around the edges. Top with the remaining dough rectangles and press the edges together with a fork to seal.
- In a small bowl, whisk together the beaten egg and water to make the egg wash. Brush the tops of the pop tarts with the egg wash.
- Place the pop tarts on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown.
