Sausage Kale Soup Recipe

 

Ingredients:

– 1 tablespoon olive oil

– 1 pound Italian sausage, casings removed

– 1 onion, chopped

– 2 cloves garlic, minced

– 4 cups chicken broth

– 2 cups water

– 1 (14.5-ounce) can diced tomatoes

– 1 teaspoon dried oregano

– 1/2 teaspoon dried basil

– 1/4 teaspoon red pepper flakes

– Salt and pepper to taste

– 4 cups chopped kale leaves

– Grated Parmesan cheese, for serving (optional)

Directions:

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add the Italian sausage to the pot and cook, breaking it up with a spoon, until browned and cooked through.
  3. Add the chopped onion to the pot and cook for 2-3 minutes, or until softened.
  4. Stir in the minced garlic and cook for an additional 1 minute.
  5. Pour in the chicken broth, water, diced tomatoes, dried oregano, dried basil, red pepper flakes, salt, and pepper. Bring the soup to a boil.
  6. Reduce the heat to low and let the soup simmer for 15-20 minutes to allow the flavors to meld together.
  7. Stir in the chopped kale leaves and cook for 5-7 minutes, or until wilted and tender.
  8. Taste and adjust seasoning with additional salt and pepper if needed.
  9. Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving, if desired.
