Ingredients:

For the Shortbread Base:

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into small pieces

For the Caramel Layer:

  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 2 tablespoons corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt (plus extra for sprinkling)

For the Chocolate Topping:

  • 6 oz semi-sweet or dark chocolate, chopped
  • 1 tablespoon unsalted butter

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Shortbread Base:

  1. In a mixing bowl, combine the flour and sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared pan.
  2. Bake the shortbread in the preheated oven for about 20-25 minutes, or until lightly golden brown. Remove from the oven and let it cool while you prepare the caramel layer.

Caramel Layer:

  1. In a medium saucepan, combine the sweetened condensed milk, butter, brown sugar, and corn syrup over medium heat. Stir constantly until the butter has melted and the mixture is smooth.
  2. Bring the mixture to a gentle boil, stirring constantly. Reduce the heat to low and simmer for about 5-7 minutes, stirring constantly, until the caramel has thickened slightly and turned a light golden color.
  3. Remove the caramel from the heat and stir in the vanilla extract and sea salt. Pour the caramel over the cooled shortbread base, spreading it out evenly. Sprinkle a little extra sea salt over the caramel layer if desired.

Chocolate Topping:

  1. In a microwave-safe bowl, combine the chopped chocolate and butter. Microwave in 30-second intervals, stirring between each interval, until the chocolate is melted and smooth.
  2. Pour the melted chocolate over the caramel layer, spreading it out evenly with a spatula.
  3. Refrigerate the bars for at least 2 hours, or until the chocolate is set. Once set, lift the bars out of the pan using the parchment paper overhang and transfer them to a cutting board. Cut into squares or bars.
