Quick Southwest Chicken Salad

Ingredients:

  • 2 cups cooked chicken breast, shredded
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Mixed greens for serving

Directions:

 

  1. In a large bowl, combine the shredded chicken, corn, black beans, red bell pepper, avocado, red onion, and cilantro.
  2. In a small bowl, whisk together the Greek yogurt, lime juice, cumin, chili powder, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss to combine.
  4. Serve the salad over a bed of mixed greens.
