Pinwheel Sandwiches

 

Ingredients:

  • 4 large flour tortillas (10-inch diameter)
  • 8 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup finely chopped green onions
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped black olives
  • 1/4 cup finely chopped cucumber
  • 1/4 cup finely chopped carrots
  • 1 cup thinly sliced deli meat (such as turkey, ham, or roast beef)
  • Salt and pepper to taste

Directions:

Prepare the Ingredients:

  1. Wash and finely chop the green onions, red bell pepper, black olives, cucumber, and carrots.
  2. Thinly slice the deli meat.
  3. Have all ingredients within easy reach.

Mix the Spread:

  1. In a mixing bowl, combine the softened cream cheese, mayonnaise, and Dijon mustard.
  2. Mix until smooth and well combined.

Spread the Mixture:

  1. Lay out one flour tortilla on a clean surface.
  2. Spread an even layer of the cream cheese mixture over the entire surface of the tortilla.

Layer the Fillings:

  1. Arrange the sliced deli meat evenly over the cream cheese layer.
  2. Sprinkle the finely chopped green onions, red bell pepper, black olives, cucumber, and carrots over the deli meat.
  3. Season with salt and pepper to taste.

Roll Up the Tortilla:

  1. Starting from one edge, tightly roll up the tortilla into a log.
  2. Repeat with the remaining tortillas and filling ingredients.

Chill and Slice:

  1. Wrap each rolled tortilla in plastic wrap and refrigerate for at least 1 hour to firm up.

Slice the Pinwheels:

  1. Remove the chilled rolls from the refrigerator and unwrap them.
  2. Use a sharp knife to slice each roll crosswise into 1-inch thick pinwheels.

Serve:

  1. Arrange the pinwheel sandwiches on a serving platter.
  2. Serve immediately, or cover and refrigerate until ready to serve.
