Ingredients:
- 1 lb (about 450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup soy sauce
- 1/4 cup pineapple juice (from the canned pineapple, if using)
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- Cooked rice, for serving
- Chopped green onions, for garnish (optional)

Instructions:
- Season the chicken pieces with salt and pepper to taste.
- In a large skillet or wok, heat the olive oil over medium-high heat. Add the seasoned chicken to the skillet and cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened, about 3-4 minutes.
- Stir in the pineapple chunks (and their juice if using canned pineapple) and cook for another 2 minutes.
- In a small bowl, whisk together the soy sauce, pineapple juice, brown sugar, rice vinegar, and cornstarch until smooth.
- Pour the sauce mixture into the skillet with the vegetables and pineapple. Cook, stirring constantly, until the sauce thickens slightly, about 2-3 minutes.
- Return the cooked chicken to the skillet and stir until everything is well coated in the sauce.
- Serve the pineapple chicken over cooked rice.
- Garnish with chopped green onions and sesame seeds, if desired.
