- Cover the dough with a clean towel and let it rest for 15-20 minutes.
- Prepare the Filling:
- In a bowl, mix together the mashed potatoes, sautéed onions, and any additional optional ingredients you’d like to include.
- Season the filling with salt and pepper to taste.
- Assemble the Pierogi:
- Roll out the dough on a lightly floured surface to about 1/8 inch thickness.
- Use a round cookie cutter or a glass to cut out circles of dough.
- Place a small spoonful of the potato filling in the center of each dough circle.
- Fold the dough over the filling to create a half-moon shape, pressing the edges together to seal. You can use a fork to crimp the edges for a decorative touch.
- Cook the Pierogi:
- Bring a large pot of salted water to a boil.
- Carefully drop the pierogi into the boiling water, a few at a time, and cook until they float to the surface, about 3-4 minutes.
- Use a slotted spoon to transfer the cooked pierogi to a colander to drain.
- Serve the Pierogi:
- You can serve the pierogi boiled as they are, or for a delicious finishing touch, you can sauté them in butter until lightly golden brown.
