Peanut butter cookies

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Cream the butter and sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add peanut butter, egg, and vanilla: Add the creamy peanut butter, egg, and vanilla extract to the butter-sugar mixture. Beat until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Mix wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Form dough balls: Roll tablespoon-sized portions of dough into balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
  7. Make criss-cross pattern: Use a fork to gently press down on each dough ball in a criss-cross pattern to flatten slightly.
  8. Bake the cookies: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
  9. Cool and enjoy: Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to wire racks to cool completely. Enjoy these classic peanut butter cookies with a glass of milk or your favorite hot beverage!
  10. Store leftovers: Store any leftover cookies in an airtight container at room temperature for up to several days. They also freeze well for longer storage.
