No Bake Peanut Butter Cookies 

 

Ingredients:

  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1/4 cup milk (whole milk or any milk of your choice)
  • 1 teaspoon vanilla extract
  • 2 cups quick-cooking oats (old-fashioned oats can also work)
  • Pinch of salt (optional)

Instructions:

  1. Line a baking sheet with parchment paper or wax paper. This will prevent the cookies from sticking and make cleanup easier.
  2. In a medium saucepan, combine the granulated sugar, peanut butter, unsalted butter, and milk over medium heat. Stir constantly until the mixture is smooth and the sugar has completely dissolved. This usually takes about 2-3 minutes.
  3. Once the mixture is smooth and combined, remove the saucepan from the heat. Stir in the vanilla extract and a pinch of salt, if desired.
  4. Gradually add the quick-cooking oats to the peanut butter mixture, stirring until well combined. Make sure all the oats are evenly coated.
  5. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. You can shape them into rounds or flatten them slightly with the back of the spoon for a more uniform shape.
  6. Allow the cookies to cool at room temperature for about 15-20 minutes, or until they have set and hardened.
  7. Once cooled and set, the cookies are ready to enjoy! Store any leftovers in an airtight container at room temperature for up to one week.
