No-Bake Funfetti Oreo Icebox Cake

 

Ingredients:

  • 1 package (14.3 ounces) Funfetti cake mix
  • Ingredients required for preparing the cake mix (usually water, oil, and eggs)
  • 1 package (14.3 ounces) Oreo cookies
  • 1 container (16 ounces) whipped topping (such as Cool Whip)
  • Sprinkles for garnish (optional)

Instructions:

  1. Prepare the Funfetti cake mix according to the package instructions. Bake the cake in a 9×13-inch baking pan according to the instructions. Allow the cake to cool completely.
  2. While the cake is cooling, crush the Oreo cookies into coarse crumbs using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin.
  3. Once the cake has cooled, use a spoon or your hands to crumble the cake into small pieces.
  4. In a large mixing bowl, combine the crumbled Funfetti cake with about 3/4 of the crushed Oreo cookies. Reserve the remaining crushed Oreos for topping.
  5. Gently fold in about half of the whipped topping into the cake and Oreo mixture until well combined. Add more whipped topping as needed until the mixture is creamy and holds together well.
  6. In a 9×13-inch baking dish or a serving dish of your choice, spread a layer of the cake and Oreo mixture evenly across the bottom.
  7. Repeat layers, alternating between the cake and Oreo mixture and the remaining whipped topping, until all ingredients are used, ending with a layer of whipped topping on top.
  8. Sprinkle the remaining crushed Oreo cookies over the top of the cake.
  9. Cover the dish with plastic wrap and refrigerate the cake for at least 4 hours or overnight to allow it to set.
