Mini Chicken Pot Pies, known as Bite-sized Comfort Delights, bring the charm of savory goodness in a miniature form. These handheld delights are the epitome of comfort food, featuring a flaky and golden-brown crust encasing a rich and flavorful filling.
You’ll need:
1-2 chicken breasts, cooked and shredded or cut in cubes
16-20 biscuits (2-3 packages)
1 bag frozen mixed veggies
2 cans cream of chicken soup
Seasonings to taste
Preheat oven to 375°. Spray muffin tin with cooking spray.
Cook chicken and shred or cut cubes. Mix in thawed veggies and cream of chicken soup.
Press biscuits into muffin pan.
Spoon mixture into each muffin.
Bake 20-25 minutes or until brown.
We had extra mix so we made rice and had the mixture over rice too but you can get more biscuits and make more of those too.
