Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions:
- Season the chicken breasts on both sides with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and red pepper flakes (if using). Cook for about 1 minute, until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and sun-dried tomatoes. Let the sauce simmer for 2-3 minutes, until slightly thickened.
- Return the chicken breasts to the skillet and spoon some of the sauce over the top.
- Sprinkle the grated Parmesan cheese over the chicken breasts and sauce.
- Cover the skillet and cook for an additional 2-3 minutes, or until the cheese is melted and the sauce is bubbly.
- Garnish with chopped fresh parsley before serving.
- Serve the Marry Me Chicken hot, with additional sauce spooned over the top if desired.
