Mango Cake

Ingredients:

For the cake:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mango puree
  • 1/2 cup milk

For the mango frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup mango puree
  • 1 teaspoon vanilla extract
  • A few drops of yellow food coloring (optional)

For the topping:

  • Fresh mango slices

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Mix in the mango puree.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. For the mango frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth.
  11. Add the mango puree and vanilla extract, mixing until well combined. If using, add a few drops of yellow food coloring.
  12. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer. Place the second layer on top and frost the entire cake.
  13. Top with fresh mango slices.
