Magic Lemon Cobbler 

 

Ingredients:

For the Lemon Filling:

  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon zest
  • 3/4 cup fresh lemon juice
  • 1 cup water

For the Cobbler Batter:

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or similar-sized casserole dish.

Make the Lemon Filling:

  1. In a medium saucepan, whisk together the granulated sugar, flour, lemon zest, lemon juice, and water.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a simmer.
  3. Remove from heat and set aside.

Prepare the Cobbler Batter:
