Little cucumber sandwiches 

 

Ingredients:

  • 1 English cucumber, thinly sliced
  • 8 ounces (about 225g) cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and black pepper, to taste
  • Sliced bread (white or whole wheat), crusts removed
  • Fresh dill sprigs, for garnish (optional)

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, mayonnaise, and chopped dill. Season with salt and black pepper to taste. Mix until well combined and smooth.
  2. Lay out the slices of bread on a clean surface. Spread a thin layer of the cream cheese mixture onto each slice of bread.
  3. Arrange the thinly sliced cucumber evenly over half of the bread slices, covering the cream cheese mixture.
  4. Top each cucumber-covered bread slice with another slice of bread, cream cheese side down, to make sandwiches.
  5. Using a sharp knife, carefully cut each sandwich into smaller, bite-sized pieces. You can cut them into triangles, rectangles, or even use cookie cutters to create fun shapes.
  6. If desired, garnish each sandwich with a small sprig of fresh dill for an extra touch of elegance.
  7. Serve the little cucumber sandwiches immediately, or cover them with plastic wrap and refrigerate until ready to serve.
