Leftover mashed potato cheese puffs 

 

Ingredients:

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 2 green onions, thinly sliced
  • 1/4 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 1/4 cup breadcrumbs (optional, for extra crispiness)
  • Salt and pepper to taste
  • Cooking spray or vegetable oil for greasing

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, sliced green onions, all-purpose flour, beaten egg, salt, and pepper. Mix until well combined.
