Kickin’ Collard Greens 

 

Ingredients:

  • 2 bunches collard greens (about 2 pounds), washed, stems removed, and chopped
  • 2 tablespoons olive oil or vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar (optional, for sweetness)
  • 1 teaspoon red pepper flakes (adjust to taste for spiciness)
  • Salt and black pepper, to taste
  • Hot sauce, for serving (optional)

Instructions:

  1. Sauté Onion and Garlic: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  2. Add Collard Greens: Add the chopped collard greens to the pot in batches, stirring until wilted before adding more. Cook until all the collard greens are wilted and reduced in volume.
  3. Add Liquid and Seasonings: Pour in the vegetable broth and apple cider vinegar. Add the brown sugar (if using), red pepper flakes, salt, and black pepper. Stir to combine.
  4. Simmer: Bring the mixture to a simmer, then reduce the heat to low. Cover and let the collard greens simmer for 45 minutes to 1 hour, stirring occasionally, until they are tender and flavorful.
