Ingredients:
– 1 and 1/2 cups warm water
– 1 tablespoon granulated sugar
– 2 teaspoons active dry yeast
– 4 cups all-purpose flour
– 1 teaspoon salt
– 1/4 cup baking soda
– Coarse sea salt, for topping
– 2 tablespoons unsalted butter, melted
Directions:
- In a large mixing bowl, combine warm water and sugar. Sprinkle yeast over the top and let it sit for 5 minutes, or until frothy.
- Add flour and salt to the bowl and mix until a dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into 6 equal portions. Shape each portion into a ball and flatten slightly.
- In a large pot, bring water to a boil and add baking soda. Boil each dough portion for 30 seconds on each side, then remove with a slotted spoon and place on the prepared baking sheet.
- Sprinkle the boiled dough with coarse sea salt and slash a shallow “X” on top of each loaf.
- Bake in the preheated oven for 12-15 minutes, or until golden brown.
- Remove from oven and brush with melted butter. Let cool slightly before serving.
