Ingredients:
– 4 cups crispy rice cereal
– 1/2 cup natural peanut butter
– 1/2 cup honey or maple syrup
– 1/4 cup coconut oil
– 1 teaspoon vanilla extract
– Pinch of salt
– 1/4 cup mini chocolate chips (optional)
– 1/4 cup chopped nuts (optional)
Directions:
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
- In a large mixing bowl, combine crispy rice cereal, peanut butter, honey or maple syrup, coconut oil, vanilla extract, and a pinch of salt. Stir until well combined.
- If using, fold in mini chocolate chips and chopped nuts until evenly distributed.
- Transfer the mixture to the prepared baking pan and press it down firmly into an even layer.
- Place the pan in the refrigerator and chill for at least 1 hour, or until the treats are firm.
- Once chilled, remove the treats from the pan using the parchment paper overhang and cut into squares or bars.
- Serve immediately, or store in an airtight container in the refrigerator for up to one week.
