Directions:
- In a large mixing bowl, combine rolled oats, peanut butter, honey or maple syrup, cocoa powder, almond milk, vanilla extract, and a pinch of salt.
- Stir until well combined and the mixture holds together.
- Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Flatten each cookie slightly with the back of the spoon.
- Place the baking sheet in the refrigerator and chill for at least 30 minutes, or until the cookies are firm.
- Once firm, store the cookies in an airtight container in the refrigerator for up to one week.
