Healthy No-Bake Chocolate Peanut Butter Cookies

 

Ingredients:

– 1 cup rolled oats

– 1/2 cup natural peanut butter

– 1/4 cup honey or maple syrup

– 1/4 cup unsweetened cocoa powder

– 1/4 cup unsweetened almond milk

– 1 teaspoon vanilla extract

– Pinch of salt

Directions:

  1. In a large mixing bowl, combine rolled oats, peanut butter, honey or maple syrup, cocoa powder, almond milk, vanilla extract, and a pinch of salt.
  2. Stir until well combined and the mixture holds together.
  3. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  4. Flatten each cookie slightly with the back of the spoon.
  5. Place the baking sheet in the refrigerator and chill for at least 30 minutes, or until the cookies are firm.
  6. Once firm, store the cookies in an airtight container in the refrigerator for up to one week.
