Healthy Chocolate Hummus

 

Ingredients:

– 1 can (15 ounces) chickpeas, drained and rinsed

– 1/4 cup unsweetened cocoa powder

– 1/4 cup creamy peanut butter or almond butter

– 1/4 cup maple syrup or honey

– 2 tablespoons coconut oil, melted

– 1 teaspoon vanilla extract

– Pinch of salt

– 2-4 tablespoons water, as needed for consistency

Directions:

  1. In a food processor, combine the chickpeas, cocoa powder, peanut butter or almond butter, maple syrup or honey, melted coconut oil, vanilla extract, and a pinch of salt.
  2. Process until smooth and creamy, scraping down the sides of the bowl as needed.
  3. With the food processor running, gradually add water, 1 tablespoon at a time, until the desired consistency is reached.
  4. Continue to process until the chocolate hummus is smooth and creamy, adding more water if necessary.
  5. Taste and adjust sweetness as needed by adding more maple syrup or honey.
  6. Transfer the chocolate hummus to a serving bowl and refrigerate for at least 30 minutes before serving.
  7. Serve with sliced fruits, pretzels, or crackers for dipping.
