Ingredients:
– 1 can (15 ounces) chickpeas, drained and rinsed
– 1/4 cup unsweetened cocoa powder
– 1/4 cup creamy peanut butter or almond butter
– 1/4 cup maple syrup or honey
– 2 tablespoons coconut oil, melted
– 1 teaspoon vanilla extract
– Pinch of salt
– 2-4 tablespoons water, as needed for consistency
Directions:
- In a food processor, combine the chickpeas, cocoa powder, peanut butter or almond butter, maple syrup or honey, melted coconut oil, vanilla extract, and a pinch of salt.
- Process until smooth and creamy, scraping down the sides of the bowl as needed.
- With the food processor running, gradually add water, 1 tablespoon at a time, until the desired consistency is reached.
- Continue to process until the chocolate hummus is smooth and creamy, adding more water if necessary.
- Taste and adjust sweetness as needed by adding more maple syrup or honey.
- Transfer the chocolate hummus to a serving bowl and refrigerate for at least 30 minutes before serving.
- Serve with sliced fruits, pretzels, or crackers for dipping.
