Egg Roll Bowls

 

Ingredients:

  • 1 pound ground pork (or chicken, turkey, or beef)
  • 1 tablespoon sesame oil (or vegetable oil)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1/4 cup soy sauce
  • 2 cups shredded cabbage (green or napa)
  • 1 cup shredded carrots
  • 1/4 cup sliced green onions (scallions)
  • 1 tablespoon rice vinegar
  • 1 tablespoon Sriracha sauce (optional)
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Sesame seeds and sliced green onions for garnish (optional)

Directions:

Prepare Ingredients:

  1. Wash and prepare all the vegetables.
  2. Grate the ginger and mince the garlic.
  3. Slice the green onions.
  4. Have all ingredients within easy reach.

Cook the Ground Pork:

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground pork to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.

Add Aromatics:

  1. Add diced onion, minced garlic, and grated ginger to the skillet with the cooked pork.
  2. Stir-fry for 2-3 minutes until the onions are translucent and fragrant.

Add Vegetables:

  1. Add shredded cabbage and shredded carrots to the skillet.
  2. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

Seasoning:

  1. Pour soy sauce, rice vinegar, and Sriracha sauce (if using) over the mixture in the skillet.
  2. Stir well to combine and coat all the ingredients.
  3. Taste and adjust seasoning with salt and pepper if needed.

Finish and Serve:

  1. Remove the skillet from heat.
  2. Serve the Egg Roll Bowls over cooked rice.
  3. Garnish with sliced green onions and sesame seeds if desired.
