Creamy Tomato Mushroom Pasta

Ingredients:

  • 320 g of Pasta
  • 300 g of Mushrooms
  • 400 g of Crushed Tomatoes
  • 100 g of Robiola Cheese
  • 1/2 of White Onions
  • 1 clove of Garlic
  • to taste of Extra Virgin Olive Oil
  • to taste of Table Salt
  • to taste of Black Pepper

Directions:

  1. To prepare Creamy Mushroom and Tomato Pasta, start by cleaning the mushrooms you choose. Then cut them into chunks and keep them aside.
  2. Peel the onion and chop it finely with a knife then brown it in a pan with a clove of garlic, a little oil, a pinch of salt until it is tender and transparent. Add the mushrooms, season with salt and deglaze with a little white wine. Add a pinch of pepper and cook for about 10 minutes, until tender.
  3. Spice with a pinch of pepper, some chopped fresh parsley and cook for about 10 minutes, until tender. Then add the crushed tomatoes, season with salt and pepper, and cook for another 15 minutes or so.
  4. Cook the pasta in plenty of salted water and a few moments before it is ready add the robiola cheese to the sauce and mix it well using, if necessary, with a little of the pasta cooking water. Once it is ready drain it and transfer it to the pan with the creamy mushroom sauce and sauté for a few moments so it is mixed well
  5. Sprinkle with a little chopped fresh parsley and serve your Creamy Mushrooms and Tomato Pasta.
