Creamy Garlic Chicken

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the chicken breasts generously with salt and black pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the skillet and cook until golden brown on both sides and cooked through, about 6-7 minutes per side depending on thickness. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the chicken broth, scraping the bottom of the skillet to deglaze and incorporate any browned bits.
  5. Stir in the heavy cream, grated Parmesan cheese, dried thyme, and dried rosemary. Bring the mixture to a simmer and cook for 5-7 minutes until the sauce thickens slightly.
  6. Return the cooked chicken breasts to the skillet, spooning some of the creamy garlic sauce over the top.
  7. Allow the chicken to simmer in the sauce for another 2-3 minutes to heat through and absorb the flavors.
  8. Garnish with freshly chopped parsley before serving.
