Creamy chicken taquitos 

 

Ingredients:

  • 2 cups cooked shredded chicken
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup salsa (choose your preferred heat level)
  • 1 cup shredded cheese (such as cheddar or Monterey Jack)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 12 small flour tortillas
  • Cooking spray or olive oil

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large mixing bowl, combine the shredded chicken, softened cream cheese, sour cream, salsa, shredded cheese, ground cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Warm the flour tortillas in the microwave for a few seconds to make them more pliable.
  4. Spoon about 2-3 tablespoons of the chicken mixture onto each tortilla, spreading it out in a line along the center.
  5. Roll up the tortillas tightly around the filling to form taquitos.
  6. Place the rolled taquitos seam-side down on the prepared baking sheet, making sure they are not touching each other.
  7. Lightly spray the tops of the taquitos with cooking spray or brush them with olive oil.
  8. Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.
  9. Remove from the oven and let the taquitos cool slightly before serving.
  10. Serve the creamy chicken taquitos warm with your favorite dipping sauce, such as salsa, guacamole, or sour cream.
