Caprese Chicken

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 large tomatoes, sliced
  • 4 slices fresh mozzarella cheese
  • 1/4 cup balsamic glaze
  • Fresh basil leaves for garnish

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through.
  3. Top each chicken breast with sliced tomatoes and a slice of fresh mozzarella cheese.
  4. Cover the skillet and cook for an additional 1-2 minutes, until the cheese is melted and bubbly.
  5. Drizzle with balsamic glaze and garnish with fresh basil leaves before serving.
