Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 large tomatoes, sliced
- 4 slices fresh mozzarella cheese
- 1/4 cup balsamic glaze
- Fresh basil leaves for garnish
Instructions:
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through.
- Top each chicken breast with sliced tomatoes and a slice of fresh mozzarella cheese.
- Cover the skillet and cook for an additional 1-2 minutes, until the cheese is melted and bubbly.
- Drizzle with balsamic glaze and garnish with fresh basil leaves before serving.
