Ingredients:
- 2 cups broccoli florets, steamed and finely chopped
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1/4 teaspoon onion powder
- Salt and black pepper, to taste
- 2 tablespoons olive oil, for frying
Directions:
- In a large mixing bowl, combine the steamed and chopped broccoli florets, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, beaten eggs, minced garlic, onion powder, salt, and black pepper. Mix until well combined.
- Using your hands, shape the mixture into patties, about 1/4 cup of mixture for each patty. Press the patties firmly to compact the mixture.
- Heat olive oil in a skillet over medium heat.
- Once the oil is hot, carefully place the broccoli cheese patties in the skillet, making sure not to overcrowd the pan.
- Cook the patties for 3-4 minutes on each side, or until golden brown and crispy.
- Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.
- Serve the broccoli cheese patties hot, garnished with additional grated Parmesan cheese or fresh herbs if desired.
