Ingredients:
– 2 cups old-fashioned rolled oats
– 1 teaspoon baking powder
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon salt
– 2 cups unsweetened almond milk or milk of choice
– 1/4 cup maple syrup or honey
– 2 tablespoons melted coconut oil or butter
– 1 large egg, beaten
– 1 teaspoon vanilla extract
– 1 and 1/2 cups fresh or frozen blueberries
– Optional toppings: additional blueberries, sliced almonds, drizzle of maple syrup
Directions:
- Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish with cooking spray or coconut oil.
- In a large mixing bowl, combine oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together almond milk, maple syrup or honey, melted coconut oil or butter, beaten egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Gently fold in the blueberries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
- Remove from the oven and let cool for a few minutes before serving.
- Serve warm with optional toppings, if desired.
