Ingredients:
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 3 cups all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
Directions:
- In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
- Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour, or until firm.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness.
- Use cookie cutters to cut out shapes from the dough and transfer them to the prepared baking sheets, leaving space between each cookie.
- Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
