Ingredients:
– 2 ripe bananas, mashed
– 1 cup old-fashioned oats
– 1/4 cup almond butter
– 1/4 cup honey or maple syrup
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon salt
– 1/4 cup chocolate chips or raisins (optional)
Directions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the mashed bananas, old-fashioned oats, almond butter, honey or maple syrup, ground cinnamon, and salt. Mix until well combined.
- If using, fold in the chocolate chips or raisins until evenly distributed throughout the cookie dough.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon or fork.
- Bake in the preheated oven for 12-15 minutes, or until golden brown around the edges.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
