Baked Raspberry Donuts

 

Ingredients:

– 1 cup all-purpose flour

– 1/3 cup granulated sugar

– 1 teaspoon baking powder

– 1/4 teaspoon baking soda

– 1/4 teaspoon salt

– 1/3 cup buttermilk

– 1/4 cup unsalted butter, melted

– 1 large egg

– 1/2 teaspoon vanilla extract

– 1/2 cup fresh raspberries, mashed

– For the glaze:

– 1 cup powdered sugar

– 2 tablespoons raspberry jam

– 1-2 tablespoons milk

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the mashed raspberries until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
  7. Bake in the preheated oven for 10-12 minutes, or until the donuts spring back when lightly touched and a toothpick inserted into the center comes out clean.
  8. Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  9. To make the glaze, whisk together the powdered sugar, raspberry jam, and milk in a small bowl until smooth. Adjust the consistency with more milk if needed.
  10. Dip each cooled donut into the glaze, allowing any excess to drip off, then place them back on the wire rack to set.
