Ingredients:

  • 2 1/4 cups (293g) Unbleached All-Purpose Flour, Plus More as Needed
  • 1 1/2 tablespoons (18g) Granulated Sugar, Divided
  • 1 1/2 teaspoons (5g) Active Dry Yeast
  • 3/4 teaspoons Salt
  • 1 Large Egg (56g) Room Temperature, Whisked
  • 1/2 cup (118ml) Whole Milk, Warmed to 100-110F
  • 3 tablespoons (43g) Unsalted Butter, Melted, Room Temperature
  • 2 Heaping Cups (254g) Mozzarella Cheese, Shredded

Garlic Butter Topping:

  • 2 tablespoons (28g) Unsalted Butter, Melted, Room Temperature
  • 1 Large Garlic Clove, Grated
  • 1 Teaspoon Fresh Parsley, Finely Chopped
  • Salt to Taste

Instructions:

  1. In the bowl of a stand mixer, whisk together the warmed milk and 1 teaspoon of sugar. Add yeast, and let it sit for 8-10 minutes until foamy.
  2. In a separate bowl, whisk together flour, salt, and remaining sugar. Attach the dough hook to the mixer, then mix egg and butter into the activated yeast. Gradually add dry ingredients until a soft dough forms. Knead for 6 minutes.
  3. Transfer dough to a greased bowl, cover, and let rise until doubled in size, about 60-90 minutes.
  4. Grease a 9-inch baking dish. Divide dough into 9 pieces. Flatten each piece, fill with cheese, and pinch to seal.
  5. Place filled dough balls in the baking dish, cover, and let rise for 25-30 minutes. Preheat oven to 350°F.
  6. Bake rolls for 30-35 minutes until golden brown.
  7. Make garlic butter by whisking together melted butter, garlic, parsley, and salt. Brush warm rolls with garlic butter before serving.
