Tenderloin Steak Diane

 

Ingredients:

  • 2 tenderloin steaks (about 6-8 oz each)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup shallots, finely chopped
  • 1/4 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons brandy or cognac
  • 1/4 cup heavy cream
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Directions:

Prepare the Steaks:

  1. Season the tenderloin steaks generously with salt and pepper on both sides. Let them sit at room temperature for about 20-30 minutes before cooking.

Heat the Pan:

  1. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat until the butter is melted and begins to sizzle.

Cook the Steaks:

  1. Carefully add the seasoned steaks to the hot skillet. Cook for about 3-4 minutes on each side for medium-rare, or adjust the cooking time according to your desired level of doneness. Once cooked, transfer the steaks to a plate and cover loosely with foil to keep warm.

Make the Sauce:

  1. In the same skillet, reduce the heat to medium. Add the remaining tablespoon of butter and allow it to melt.
  2. Add the minced garlic and chopped shallots to the skillet. Sauté for about 1-2 minutes until fragrant and softened.

Deglaze the Pan:

  1. Pour in the brandy or cognac to deglaze the pan, scraping up any browned bits from the bottom with a wooden spoon. Allow the alcohol to cook off for about 1 minute.

Add the Flavor:

  1. Stir in the Worcestershire sauce and Dijon mustard, mixing well to combine with the shallots and garlic.

Finish the Sauce:

  1. Pour in the beef broth and let it simmer for a few minutes until slightly reduced.
  2. Reduce the heat to low and stir in the heavy cream. Simmer gently for another 2-3 minutes until the sauce thickens slightly.

Serve:

  1. Return the cooked steaks and any accumulated juices to the skillet, turning them in the sauce to coat.
  2. Allow the steaks to heat through for about 1 minute in the sauce.
  3. Transfer the steaks to serving plates, spooning the sauce over the top.
  4. Garnish with chopped fresh parsley.
