Buffalo Chicken Salad

 

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup blue cheese crumbles
  • 1/4 cup ranch dressing
  • Salt and pepper to taste

Directions:

Step 1: Preheat your grill or grill pan to medium-high heat.

Step 2: Season the chicken breasts with salt and pepper.

Step 3: In a small bowl, mix together the buffalo sauce and olive oil.

Step 4: Brush the buffalo sauce mixture onto both sides of the chicken breasts.

Step 5: Place the chicken breasts on the grill and cook for about 6-7 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let them rest for a few minutes.

Step 6: While the chicken is resting, prepare the salad. In a large bowl, toss together the chopped romaine lettuce, cherry tomatoes, and sliced red onion.

Step 7: Slice the grilled chicken breasts into strips.

Step 8: Add the sliced chicken to the salad.

Step 9: Sprinkle the blue cheese crumbles over the top of the salad.

Step 10: Drizzle the ranch dressing over the salad.

Step 11: Toss everything together until well combined.

Step 12: Serve immediately and enjoy your delicious Buffalo Chicken Salad!
