Ingredients:
For the Chicken:
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
For the Rice:
- 1 cup long-grain white rice
- 2 cups water
- 1 tablespoon lime juice
- 2 tablespoons chopped fresh cilantro
- Salt to taste
For the Black Beans:
- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt to taste
For the Corn Salsa:
- 1 cup corn kernels (fresh, canned, or frozen)
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- Salt to taste
Additional Toppings:
- Sliced lettuce
- Diced tomatoes
- Sliced avocado
- Shredded cheese
- Sour cream
- Salsa
- Lime wedges
Directions:
Prepare the Chicken:
- In a bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Add chicken breasts to the bowl and coat them evenly with the spice mixture.
- Heat a grill pan or skillet over medium-high heat.
- Cook the chicken breasts for 6-7 minutes on each side, or until cooked through. Remove from heat and let them rest for a few minutes before slicing.
Cook the Rice:
- In a medium saucepan, combine rice, water, and a pinch of salt.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and water is absorbed.
- Once cooked, fluff the rice with a fork and stir in lime juice and chopped cilantro.
Prepare the Black Beans:
- In a small saucepan, combine black beans, cumin, chili powder, and a pinch of salt.
- Heat over medium heat until warmed through, stirring occasionally. Remove from heat and set aside.
Make the Corn Salsa:
- In a bowl, combine corn kernels, diced red onion, chopped cilantro, lime juice, and salt. Mix well.
Assemble the Burrito Bowls:
- Start with a layer of cooked rice at the bottom of each serving bowl.
- Top with black beans, sliced chicken, corn salsa, lettuce, diced tomatoes, sliced avocado, shredded cheese, sour cream, and salsa as desired.
- Garnish with lime wedges.
