- 1/4 cup finely chopped cucumber
- 1/4 cup finely chopped carrots
- 1 cup thinly sliced deli meat (such as turkey, ham, or roast beef)

Directions:
Prepare the Ingredients:
- Wash and finely chop the green onions, red bell pepper, black olives, cucumber, and carrots.
- Thinly slice the deli meat.
- Have all ingredients within easy reach.
Mix the Spread:
- In a mixing bowl, combine the softened cream cheese, mayonnaise, and Dijon mustard.
- Mix until smooth and well combined.
Spread the Mixture:
- Lay out one flour tortilla on a clean surface.
- Spread an even layer of the cream cheese mixture over the entire surface of the tortilla.
Layer the Fillings:
- Arrange the sliced deli meat evenly over the cream cheese layer.
- Sprinkle the finely chopped green onions, red bell pepper, black olives, cucumber, and carrots over the deli meat.
- Season with salt and pepper to taste.
Roll Up the Tortilla:
- Starting from one edge, tightly roll up the tortilla into a log.
- Repeat with the remaining tortillas and filling ingredients.
Chill and Slice:
- Wrap each rolled tortilla in plastic wrap and refrigerate for at least 1 hour to firm up.
Slice the Pinwheels:
- Remove the chilled rolls from the refrigerator and unwrap them.
- Use a sharp knife to slice each roll crosswise into 1-inch thick pinwheels.
Serve:
- Arrange the pinwheel sandwiches on a serving platter.
