- 2 cups shredded cabbage (green or napa)
- 1 cup shredded carrots
- 1/4 cup sliced green onions (scallions)
- 1 tablespoon rice vinegar
- 1 tablespoon Sriracha sauce (optional)
- Salt and pepper to taste
- Cooked rice, for serving
- Sesame seeds and sliced green onions for garnish (optional)
Directions:
Prepare Ingredients:
- Wash and prepare all the vegetables.
- Grate the ginger and mince the garlic.
- Slice the green onions.
- Have all ingredients within easy reach.
Cook the Ground Pork:
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add ground pork to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
Add Aromatics:
- Add diced onion, minced garlic, and grated ginger to the skillet with the cooked pork.
- Stir-fry for 2-3 minutes until the onions are translucent and fragrant.
Add Vegetables:
- Add shredded cabbage and shredded carrots to the skillet.
- Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
Seasoning:
- Pour soy sauce, rice vinegar, and Sriracha sauce (if using) over the mixture in the skillet.
- Stir well to combine and coat all the ingredients.
- Taste and adjust seasoning with salt and pepper if needed.
Finish and Serve:
- Remove the skillet from heat.
- Serve the Egg Roll Bowls over cooked rice.
- Garnish with sliced green onions and sesame seeds if desired.
