Lemon Garlic Chicken

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1/4 cup chicken broth
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through.
  3. Add minced garlic to the skillet and cook for 1-2 minutes, until fragrant.
  4. Stir in lemon zest, lemon juice, and chicken broth. Simmer for 2-3 minutes, until the sauce thickens slightly.
  5. Garnish with chopped parsley and serve.
