Ingredients:
- 12 ounces (about 340g) pasta (such as spaghetti, linguine, or penne)
- 2 cups fresh basil leaves, packed
- 1/2 cup grated Parmesan cheese
- 1/2 cup pine nuts or walnuts
- 2 cloves garlic, minced
- 1/2 cup extra-virgin olive oil
- Salt and pepper to taste
- Optional toppings: additional grated Parmesan cheese, cherry tomatoes, fresh basil leaves
Instructions:
- Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving some of the pasta water.
- In a food processor or blender, combine the fresh basil leaves, grated Parmesan cheese, pine nuts or walnuts, and minced garlic. Pulse until the ingredients are finely chopped.
- With the food processor or blender running, slowly drizzle in the olive oil until the pesto is smooth and well combined. Season with salt and pepper to taste.
- In a large mixing bowl, toss the cooked pasta with the pesto sauce until evenly coated. If the sauce is too thick, you can add a little bit of the reserved pasta water to thin it out.
- Serve the pesto pasta warm, garnished with additional grated Parmesan cheese, cherry tomatoes, and fresh basil leaves if desired.
