Pesto Pasta recipe

 

Ingredients:

  • 12 ounces (about 340g) pasta (such as spaghetti, linguine, or penne)
  • 2 cups fresh basil leaves, packed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pine nuts or walnuts
  • 2 cloves garlic, minced
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste
  • Optional toppings: additional grated Parmesan cheese, cherry tomatoes, fresh basil leaves

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving some of the pasta water.
  2. In a food processor or blender, combine the fresh basil leaves, grated Parmesan cheese, pine nuts or walnuts, and minced garlic. Pulse until the ingredients are finely chopped.
  3. With the food processor or blender running, slowly drizzle in the olive oil until the pesto is smooth and well combined. Season with salt and pepper to taste.
  4. In a large mixing bowl, toss the cooked pasta with the pesto sauce until evenly coated. If the sauce is too thick, you can add a little bit of the reserved pasta water to thin it out.
  5. Serve the pesto pasta warm, garnished with additional grated Parmesan cheese, cherry tomatoes, and fresh basil leaves if desired.
