Deluxe Corned Beef Hash

 

Ingredients:

– 2 tablespoons butter

– 2 cups chopped onion

– 2 cups chopped bell pepper

– 4 cups chopped cooked corned beef

– 4 cups chopped cooked potatoes

– Salt and pepper to taste

– 1/4 cup chopped fresh parsley

Directions:

  1. Melt butter in a large skillet over medium heat.
  2. Add onion and bell pepper; cook and stir until softened, about 5 minutes.
  3. Stir in corned beef and potatoes; spread mixture evenly in the skillet.
  4. Cook, without stirring, until bottom is crispy, about 10 minutes.
  5. Flip hash in sections and continue cooking until other side is crispy, about 10 minutes more.
  6. Season with salt, pepper, and parsley before serving.
