Ingredients:
– 2 tablespoons butter
– 2 cups chopped onion
– 2 cups chopped bell pepper
– 4 cups chopped cooked corned beef
– 4 cups chopped cooked potatoes
– Salt and pepper to taste
– 1/4 cup chopped fresh parsley
Directions:
- Melt butter in a large skillet over medium heat.
- Add onion and bell pepper; cook and stir until softened, about 5 minutes.
- Stir in corned beef and potatoes; spread mixture evenly in the skillet.
- Cook, without stirring, until bottom is crispy, about 10 minutes.
- Flip hash in sections and continue cooking until other side is crispy, about 10 minutes more.
- Season with salt, pepper, and parsley before serving.
