Directions:
- Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the mashed raspberries until evenly distributed throughout the batter.
- Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
- Bake in the preheated oven for 10-12 minutes, or until the donuts spring back when lightly touched and a toothpick inserted into the center comes out clean.
- Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- To make the glaze, whisk together the powdered sugar, raspberry jam, and milk in a small bowl until smooth. Adjust the consistency with more milk if needed.
- Dip each cooled donut into the glaze, allowing any excess to drip off, then place them back on the wire rack to set.
