Ingredients:

– 1 log (8 ounces) goat cheese

– 1/2 cup dried cranberries

– 1/4 cup chopped pecans

– 2 tablespoons honey

– 1 tablespoon chopped fresh rosemary

– Crackers or baguette slices, for serving

Directions:

  1. In a small bowl, combine the dried cranberries, chopped pecans, honey, and chopped fresh rosemary. Mix well to combine.
  2. On a clean surface, lay out a piece of plastic wrap. Place the goat cheese log in the center of the plastic wrap.
  3. Spoon the cranberry mixture onto the goat cheese log, pressing gently to adhere.
  4. Use the plastic wrap to help shape the goat cheese into a ball, ensuring that the cranberry mixture coats the entire surface.
  5. Once shaped, wrap the goat cheese ball tightly in the plastic wrap and refrigerate for at least 1 hour to firm up.
  6. Before serving, unwrap the goat cheese ball and transfer it to a serving platter.
  7. Serve the cranberry goat cheese appetizer with crackers or baguette slices for spreading.
