Flourless Peanut Butter Cookies

 

Ingredients:

– 1 cup creamy peanut butter

– 1 cup granulated sugar

– 1 large egg

– 1 teaspoon vanilla extract

– 1/2 teaspoon baking soda

– Pinch of salt

Directions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the creamy peanut butter, granulated sugar, egg, vanilla extract, baking soda, and a pinch of salt.
  3. Mix everything together until well combined and a smooth dough forms.
  4. Using a tablespoon or cookie scoop, portion out the dough and roll it into balls.
  5. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Use a fork to flatten each dough ball, creating a crisscross pattern on top.
  7. Bake in the preheated oven for 8-10 minutes, or until the cookies are lightly golden brown around the edges.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
