Ingredients:
– 2 cups rolled oats
– 1/2 cup shredded coconut
– 1/4 cup chopped almonds
– 1/4 cup dried cranberries
– 1/4 cup chocolate chips
– 1/4 cup sunflower seeds
– 1/4 cup pumpkin seeds
– 1/4 cup honey
– 2 tablespoons melted coconut oil
– 1 teaspoon vanilla extract
– Pinch of salt
Directions:
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, shredded coconut, chopped almonds, dried cranberries, chocolate chips, sunflower seeds, and pumpkin seeds. Stir until evenly mixed.
- In a separate small bowl, whisk together the honey, melted coconut oil, vanilla extract, and a pinch of salt until well combined.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the mixture out onto the prepared baking sheet in an even layer.
- Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the mixture is golden brown and toasted.
- Remove from the oven and let cool completely on the baking sheet.
- Once cooled, transfer the reindeer chow to an airtight container for storage.
- Serve as a festive snack or sprinkle it on your lawn on Christmas Eve to give Santa’s reindeer a special treat!
